Come watermelon season my FAVORITE way to beat the summer heat is with this Mint + Lime Watermelon Refresher. It's just 4 ingredients, and is as easy as chucking everything into a blender!

Growing up in the South, three particular produce-stand treasures remind me Summer has officially arrived. What table would be complete without sweet yellow corn on the cob, thickly sliced red tomatoes (possibly the most coveted of all Southern summer side dishes), and endless plates of sweet, juicy watermelon!
Perfect for taking on a picnic, sipping outside on your patio, or spoiling yourself at your office desk, it's beyond easy to blend a batch of this to share with friends while playing a round of corn hole.
And with Cinco de Mayo celebrations just around the corner I'm sure you could use this as the base for a fantastic mixed drink -- I have yet to try!

Mint + Lime Watermelon Refresher (serves 4 people)
4-5 cups cubed, fresh Watermelon (I used about 1/3 of a medium-sized watermelon)
1-1 1/2 cups cubed Ice
2 Limes, juiced
3 heaping tablespoons fresh Mint, finely chopped
Layer your ice cubes, then cubed watermelon into the base of a blender. Pulse and blend until smooth*.
Add the lime juice and chopped mint; blend again until smooth.
Pour over ice to enjoy, or store in the fridge to chill before serving.
*You may need to stop and stir it a couple of times in the beginning, that's why I wait to add the rest of the ingredients. Additionally, you can pour it through a fine mesh strainer at this stage if you would like a smoother, less frothy drink.
