Baked Eggs with Havarti and Chives

I think the first time I had these baked eggs was about 5 years ago at a picturesque little bed & breakfast called the Essex Inn. Although they're closed now, this recipe has remained a favorite.
It's that kind of decadent breakfast food that warrants a nice long nap afterwards.

Super easy to scale up or down, for a large group of people, or just yourself :)

Ingredients (per serving):
1 tsp Butter
2 T Heavy Cream, or Half and Half
2 Eggs
1-2 T shredded Havarti Cheese
About 1 tsp Chives (you can use dried or fresh)
Salt and Pepper to taste
Preheat your oven to 450 degrees Fahrenheit
Place butter in ramekin (or other oven-safe dish), and let melt.
Once butter is melted, remove the ramekin from the oven and pour in the cream. Then crack both eggs into the ramekin, sprinkle with cheese, chives, salt and pepper.
Place the ramekin back into the oven and bake for 8-10 minutes; the edges will be slightly golden and bubbly, with the whites done, but the yolks still soft.
Let cool slightly before eating - I like to serve mine with fresh fruit, and bacon.
