Cinnamon Banana Bread

Mary Berry, I promise I only tweaked your recipe a smidge.
Would it really have been a 2020 Quarantine if I hadn't made several loaves of banana bread? It was so interesting to see the recipes that flourished during the initial onset of coronavirus: Dalgona coffee, banana bread - heck, bread in general!
I kid you not, my friend and I discussed the logistics of a sourdough starter drop-off.
She lives two hours away.
What you'll love about this Cinnamon Banana Bread:
Mixes all in one bowl
Crispy top-crust
Super buttery
Subtle, warm flavor
Also delicious with the addition of chopped walnuts
Ingredients:
2 Very Bananas, mashed
2 T Milk of your choice
6 T Butter, softened*
2 Eggs, slightly beaten
1 cup All-Purpose Flour
3/4 cup White Sugar
1 tsp Baking Soda
1 tsp Baking Powder
1 tsp Vanilla Extract
3/4 tsp Ground Cinnamon
Turbinado Sugar for sprinkling on top (anywhere from 1/8 - 1/4 cup - personal preference)
*The butter should be softened enough so there aren't any clumps when the batter is mixed (aside from the texture of the bananas), however, don't worry if there are some lumps of butter visible - they will bake out and ultimately not change the final bread too much.
Instructions:
Preheat your oven to 325 degrees.
Line the bottom and sides of a metal 8.5 x 4.5 inch loaf pan with parchment paper, and set aside.
In a large bowl, combine all ingredients (except for the Turbinado sugar) and mix until just incorporated (be careful not to over-mix, as this will make the bread rubbery).
Pour the batter into the prepared loaf pan, and sprinkle the Turbinado sugar evenly over the top (this should form a nice crust when baked).
Place the loaf pan in the top half of your preheated oven, and bake for 1hour, or until a skewer comes out clean when inserted into the middle of the banana bread.
After the banana bread is done baking, remove it from the oven and let it cool in the pan for 20 minutes. Remove the banana bread from the loaf pan; allow it to finish cooling completely before slicing, or serve while still slightly warm. Enjoy!
