Best-Ever Cranberry Walnut Granola Bars

For me, the perfect granola bar has just the right balance of textures, is a little bit sweet, will fill you up for a while, and doesn't feel like you might break a tooth when biting into it.


Determined to find such a granola bar recipe I ended up adapting this one by The Minimalist Baker, and walked away happy with what I'm calling my Best-Ever Cranberry Walnut Granola Bars.

For the Best-Ever Cranberry Walnut Granola Bars:

1 heaping cup Dates, pitted

1/4 cup (Grade A) Maple Syrup (or Honey, if not vegan)

1/4 Creamy Peanut (you can also use Almond Butter)

1 cup Walnuts, chopped and toasted

1 1/2 cups Oats

1/2 tsp Ground Cinnamon

1/2 cup Dried Cranberries

1/2 cup Pumpkin Seeds, toasted

  1. Process the dates in a food processor until they're in small chunks, and quite smoothed out (mine usually starts collecting into a ball).

  2. In a mixing bowl, place dates, walnuts, oats*, cinnamon, cranberries, pumpkin seeds.

  3. In a small sauce pan, warm the maple syrup and nut butter over low heat, and stir together until smooth.

  4. Pour the syrup mixture over the dry ingredients in your mixing bowl, and thoroughly mix to combine; make sure you break apart all of the processed dates.

  5. Once well mixed, spread evenly into an 8x8 baking dish lined with plastic wrap, and make sure to press down firmly to really pack the mixture together.

  6. Cover with plastic wrap, and let firm up in the fridge or freezer for 1 hour.

  7. After the mixture is firm, remove from the pan, and slice into desired shape and number of bars/squares.

  8. To store them, I wrap them up in wax paper, and place keep them in a Ziploc bag in my freezer.

*For an additional layer of flavor, toast the oats - do this by simply placing them on a baking sheet in the oven for 5-10 minutes at 350 degrees.
