Cinnamon Oatmeal Pecan Cookies

Valentine's Day is just around the corner, and while there's nothing like fresh-baked cookies to express your love for someone, the night I came up with this recipe I definitely wasn't looking to share ;)


That night was like most nights. I enjoyed a great meal for dinner...and then my sweet-tooth started calling. The partial bag of chocolate chips in my pantry just wasn't going to cut it.

I wanted "homemade," and I wanted "cookie."


Thus, I present to you my Cinnamon Oatmeal Pecan Cookies.


What you'll love about these cookies:

.....umm, it's a freshly baked cookie! What's not to love?



Ingredients (makes around 2 dozen cookies):

2 1/2 cups All-Purpose Flour

1 tsp Baking Soda

1 tsp Cinnamon

1/4 tsp Salt

2 sticks (Salted) Butter, softened

1 1/2 cups packed Brown Sugar

1 tsp Vanilla Extract

2 Eggs

2 cups chopped Pecans

1-2 cups Old Fashioned Oats*


*Using only 1 cup of oats results in a more flat, chewy cookie, while using 2 cups creates a thicker, more cakey cookie


  1. Preheat oven to 375 degrees Fahrenheit

  2. In a medium sized bowl, combine flour, baking soda, cinnamon, and salt.

  3. In a separate, larger bowl, beat together the butter, sugar, and vanilla. Beat in the eggs one at a time.

  4. Gradually add in the flour mixture - be sure to scrape down the bottom and sides of the mixing bowl, but careful not to overwork the mixture.

  5. Stir in the pecans and oats.

  6. Form rounded tablespoons of the dough into balls, and place onto a baking sheet. Bake for 10-12 minutes until golden brown.

  7. Let cool slightly on a wire rack, and enjoy!
