Go-To Avocado + Egg Toast

At this point Avocado Toast is like a dear family friend to the culinary world. While endless toast topping combinations are out there, my favorites are the most simple and straightforward.
Thus I present to you: my Go-To Avocado + Egg Toast.
Making the perfect speedy breakfast, or satisfying lunch, this combination of creamy eggs and buttery avocado is -- well, amazing.
I almost feel silly writing out this recipe because it's so simple!

To make my Go-To Avocado + Egg Toast
2 Eggs
1/2 Avocado
1 slice desired bread (I typically prefer Boule, but this time only had Sourdough)
Sriracha (optional)
Salt + Pepper for seasoning
In a small bowl, mash the avocado with a fork until desired smoothness, and season with salt and pepper to taste. Set aside.
Pop your slice of bread in the toaster, and while that's doing its thing, make your eggs!
I like my scrambled eggs in big curds, and cream (as a result of not being overcooked and dried out) - to do that, I typically melt 1/2 T butter in a small pan over medium heat, then remove the pan from the heat and add the eggs, an salt and pepper to taste, Returning the pan to the heat I stir everything together and breaking up the egg yolks, with a rubber spatula (I find this leaves the least amount of egg behind on the pan while cooking). I stir the eggs around, and shimmy the pan back and forth, until my eggs are how I prefer (don't over stir or overcook) and it's time to assemble!
Spread your mashed avocado onto your piece of toast, nestle your scrambled eggs on top, and then drizzle with Sriracha.
