When I was in college I took a public speaking course, and wouldn't you know all of my speeches ended up being about food! For one assignment we had to teach the class how to do something we were knowledgable in, all the while keeping our listeners engaged. So I did a cooking demo and taught everyone how to make guacamole!

Whether or not you're a broke college student, making your own guacamole (and chips to make it extra special) is a thoughtful, but affordable appetizer or side dish to bring to a party. And hey, Cinco de Mayo is tomorrow!

Besides, I've literally never seen anyone bored by the site of fresh guacamole!

What you'll love about my Go-To Guacamole:

  • Super fast to make!

  • 4 Ingredients

  • The ultimate crowd-pleaser

Let's get real though. There are several strong camps of thought when it comes to what makes the best guacamole. Is it diced onion? Jalepeño? TOMATO? *gasp*

No joke, when I bought the avocados for this recipe, the cashier and I were talking about what we each liked to put in our guacamole, and when she said she sometimes added tomato, I actually told her that was a controversial ingredient.

I need to stop listening to The Sporkful podcast.

My Go-To Chips & Guacamole: (serves 4 people)

3 Avocados, roughly chopped

1 1/2 Limes, juiced

2-3 T finely chopped Cilantro

1/2 tsp Salt

  1. Place all the ingredients into a bowl, and mash together with a fork, until desired texture is met.

  2. Season with more salt or lime juice if needed, and serve with chips!

To Make your own Tortilla Chips:

6 corn tortillas (I prefer yellow corn tortillas)

Canola cooking spray

About 1 tsp salt

  1. Preheat your oven to 400 degrees Fahrenheit.

  2. Lay the tortillas flat across a large baking sheet. Spray one side with canola cooking spray, and season with salt. Flip over the tortillas and repeat the process on the other side.

  3. Slice the tortillas into wedges, and spread evenly across baking sheet.

  4. Bake in the oven for 10-12 minutes until golden brown and crispy. Enjoy!
